Creamy Chicken & Rotini
We tried a new recipe tonight. I have so much free pasta, I needed to find some way to use some of it. I searched my favorite recipe site, Food.com, and found Creamy Chicken & Rotini Casserole. It was a great warm dinner that went well with steamed broccoli.
Place the noodles in a baking dish.
Place cooked chicken on top of the noodles.
Pour the cheese sauce on top.
Sprinkle cracker crumb mixture on top and pop in the oven.
It looked so good when it came out of the oven.
Be sure to stir it up to cover all the noodles and enjoy!

Sweet & Salty
I love sweet and salty! I found a recipe for chocolate covered saltines here and thought what a quick and easy way to satisfy a sweet and salty craving.
You may think I'm pretty boring, but all I only added the chocolate chips and some peanuts that I had crushed in my food processor. I also didn't use an entire cup of butter and they turned out great!

Baked Salmon
We've been grilling salmon all summer, but last night I decided to try it baked. I haven't eaten a lot of salmon. I grew up on suckers, catfish and bass. All fried too! I never knew there was another way to eat fish until I met Hubs.
I placed the salmon skin side down in my baking dish and spread a little mayo over the top. I then added seasoned salt, lemon pepper seasoning and panko bread crumbs. Of course, I never measure anything. I baked it for about 30 minutes at 350 degrees and then broiled it for 4-5 minutes on low to get the panko crumbs browned nicely. I actually liked it a lot better than the grilled salmon we've been having.

Banana Muffins
We made banana muffins! I used this recipe. I followed the recipe, but left out the nuts and the granola. I also had enough batter to make 12 regular muffins and 24 mini muffins, plenty to freeze. Next time I make them, I'm going to add my Kashi Dark Chocolate Almond Granola cereal. Yum!

Root Beer Pulled Pork
I made root beer pulled pork a couple of days ago. I had never tried it before, but am so glad I did. It is so good! All I did was put a pork roast in my crock pot, poured about 12 oz. of root beer over it and let it cook on low for about 6 hours.
After it was done, I drained the root beer juices off and shredded the roast. Then I added a bottle of BBQ sauce and let it warm up about 30 more minutes. We ate it on hamburger buns and loved it!
I also made baked fries to go along with our pulled pork sandwiches. I just cut up russet potatoes, drizzled with olive oil and sprinkled with salt, pepper and McCormick's Garlic Herb Seasoning Blend. I don't remember how long it took to bake them. I baked them, as my mom would say, until they were done. They went along great with our sandwiches and it was a quick, easy meal.

Cucumber Salsa
We made this cucumber salsa for dinner tonight to go along with our turkey tacos. I found the recipe at Food.com, formerly Recipe Zaar. We have so many cucumbers and tomatoes that I've really had to get creative lately. This is our salsa in the picture below. Ours is rather chunky because that's how we like it. It was really good and went well with our dinner.

Garlic Panko Chicken Strips
I've been wanting to bake something using Panko bread crumbs for quite a while now. I finally picked some up last week at the grocery store. We tried Garlic Panko Chicken Strips and they were so good. The Panko crumbs baked up crunchier than regular bread crumbs. I am a big Panko fan now and can't wait to try more Panko recipes!

We Love Leftovers
We had leftovers from our Blackened Chicken that Hubs grilled the other night. So tonight we turned it into our own Blackened Chicken Salad. It was another yummy, quick meal. Baby Jaws even chomps on salad when he's in the mood and Big Brother ate his share too. That boy can put away the salad! We don't turn our noses up at leftovers at this house. If you don't want the exact same dinner you had the first time, you can usually turn it into an entirely different meal.

Blackened Chicken
I love to cook and bake! I've been posting lots of things I've made lately to share with everyone. I would love to start a food blog, but keeping up with this blog, my Save With Scissors blog and two little guys is enough for me at the moment.
We grill almost constantly once the great weather gets going. Hubs is the Grill Master. Tonight we had blackened chicken that I found in a Taste of Home magazine a few years ago. We loved it the first time we tried it and have made it many times since. It went great with some of my great coupon deals: Green Giant Steamers potatoes and veggies, Green Giant Steamers corn on the cob and my Kroger crescent rolls. It was a quick, easy meal we pulled together with things we are stocked up on and already had on hand.

Red Potatoes
Hubs grilled pork chops tonight and I made my yummy red potatoes to go along with them. These are made with onion soup mix. When I realized I didn't have any onion soup mix, I made my own found here at Recipe Zaar. Here is the finished onion soup mix.
I microwave my red potatoes for a few minutes to soften them up a bit. Then I drizzle with olive oil.
Pour the onion soup mix over the potatoes.
Stir onion soup mix into the potatoes to cover them.
Bake at 350 for 30-40 minutes. These are so good!

Chicken Fettuccine, Cajun Style
We tried another new recipe this week from Recipe Zaar. It is Chicken Fettuccine, Cajun Style. We really liked it. I thought it might be a little spicy for the boys, but they liked it too. Yummy!

Cinnamon Rolls
When I'm not couponing and chasing boys, I love to cook and bake. I am completely addicted to RecipeZaar. I have tried so many recipes from this site and they are just awesome. Here are the cinnamon rolls from start to finish we tried. I use my bread machine a lot and these were very easy to make. I actually let them rise in the refrigerator overnight. I just popped them in the oven when we got up for a quick breakfast. Very yummy.
I rolled out the dough and brushed with butter.

Yummy Turkeys
Thanksgiving may not be until next week, but my turkey pancakes were all gobbled up. This was Big Brother's, complete with apple feathers. I also made some with banana feathers. The mini M&M eyes were by far Baby Jaw's favorite part of the meal. We will be having these again before Thanksgiving and it will definitely be our Thanksgiving breakfast treat.
